Description
A quick and delicious one-pot Cajun chicken pasta recipe that’s perfect for a weeknight meal. All cooked in a single pot for easy cleanup!
Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tsp Cajun seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, undrained
- 4 cups chicken broth
- 8 oz uncooked pasta (penne, rotini, or fettuccine work well)
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley (optional, for garnish)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat.
- Add chicken pieces, Cajun seasoning, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add chopped onion to the pot and cook until softened, about 3-5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in diced tomatoes (undrained) and chicken broth. Bring to a boil.
- Add the uncooked pasta to the pot, stirring to ensure it’s submerged in the liquid.
- Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is al dente, stirring occasionally.
- Return the cooked chicken to the pot. Stir in heavy cream and Parmesan cheese.
- Cook for another 2-3 minutes, stirring, until the sauce has thickened and the chicken is heated through.
- Garnish with fresh parsley if desired. Serve immediately.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a spicier dish, add a pinch of cayenne pepper.
- If the sauce is too thick, add a little more chicken broth or water.
- If the sauce is too thin, let it simmer uncovered for a few extra minutes.
