A quick and delicious one-pot Cajun chicken pasta recipe that’s perfect for a weeknight meal. All cooked in a single pot for easy cleanup!


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tsp Cajun seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 4 cups chicken broth
  • 8 oz uncooked pasta (penne, rotini, or fettuccine work well)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (optional, for garnish)


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces, Cajun seasoning, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add chopped onion to the pot and cook until softened, about 3-5 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Stir in diced tomatoes (undrained) and chicken broth. Bring to a boil.
  6. Add the uncooked pasta to the pot, stirring to ensure it’s submerged in the liquid.
  7. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, or until pasta is al dente, stirring occasionally.
  8. Return the cooked chicken to the pot. Stir in heavy cream and Parmesan cheese.
  9. Cook for another 2-3 minutes, stirring, until the sauce has thickened and the chicken is heated through.
  10. Garnish with fresh parsley if desired. Serve immediately.

Notes

  • Adjust Cajun seasoning to your spice preference.
  • For a spicier dish, add a pinch of cayenne pepper.
  • If the sauce is too thick, add a little more chicken broth or water.
  • If the sauce is too thin, let it simmer uncovered for a few extra minutes.
