These no-bake Oatmeal Peanut Butter Energy Bites are the perfect healthy snack to fuel your day. Packed with wholesome ingredients, they are quick to make and incredibly satisfying.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup ground flaxseed
  • 1/4 cup mini chocolate chips (optional)
  • 1 teaspoon vanilla extract


Instructions

  1. In a medium bowl, combine the rolled oats, peanut butter, honey or maple syrup, ground flaxseed, mini chocolate chips (if using), and vanilla extract.
  2. Stir the ingredients together until well combined. The mixture should be slightly sticky and hold together when pressed.
  3. If the mixture is too dry, add a little more honey or peanut butter. If it’s too wet, add a few more oats.
  4. Roll the mixture into bite-sized balls, about 1-inch in diameter.
  5. Place the energy bites on a plate or baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to allow them to firm up.
  7. Store in an airtight container in the refrigerator.
