These no-bake Oatmeal Peanut Butter Energy Bites are the perfect healthy snack to fuel your day. Packed with wholesome ingredients, they are quick to make and incredibly satisfying.
Ingredients
- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/3 cup honey or maple syrup
- 1/4 cup ground flaxseed
- 1/4 cup mini chocolate chips (optional)
- 1 teaspoon vanilla extract
Instructions
- In a medium bowl, combine the rolled oats, peanut butter, honey or maple syrup, ground flaxseed, mini chocolate chips (if using), and vanilla extract.
- Stir the ingredients together until well combined. The mixture should be slightly sticky and hold together when pressed.
- If the mixture is too dry, add a little more honey or peanut butter. If it’s too wet, add a few more oats.
- Roll the mixture into bite-sized balls, about 1-inch in diameter.
- Place the energy bites on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to allow them to firm up.
- Store in an airtight container in the refrigerator.
Notes
- For a vegan option, use maple syrup instead of honey.
- Add other ingredients like chia seeds, shredded coconut, or chopped nuts for variation.
- These bites can be stored in the refrigerator for up to a week.
