Description

Homemade oatmeal cream pies, a delightful and nostalgic dessert featuring soft oatmeal cookies sandwiched with a sweet cream filling.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3 cups old-fashioned rolled oats
  • For the Filling:
  • 1 cup (2 sticks) unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Stir in the rolled oats until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. While the cookies cool, prepare the filling: In a large bowl, beat softened butter until creamy.
  10. Gradually beat in powdered sugar, alternating with milk, until smooth and creamy. Stir in vanilla extract.
  11. Once the cookies are completely cool, spread a generous amount of filling onto the flat side of one cookie and top with another cookie to create a sandwich.
  12. Repeat with remaining cookies.

Notes

  • Ensure butter is softened but not melted for best cookie texture.
  • Do not overmix the dough after adding the dry ingredients.
  • Baking time may vary depending on your oven. Watch cookies closely.
  • For a creamier filling, you can add a little more milk, 1 teaspoon at a time.
  • Store cream pies in an airtight container at room temperature for up to 3 days, or in the refrigerator for longer storage.
