Instructions

  1. Heat the vegetable broth in a saucepan and keep it simmering over low heat.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the shallot and cook until softened, about 3 minutes.
  3. Add the garlic and mushrooms and cook until the mushrooms are tender and have released their liquid, about 5-7 minutes.

  9. Serve immediately, garnished with extra Parmesan cheese and fresh parsley.
