Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat.
  3. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  4. Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
  5. Add minced garlic and cook for 1 minute until fragrant.
  6. Pour in chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Stir in Parmesan cheese until melted and well combined.
  8. Return the cooked chicken to the skillet and toss to coat in the creamy mushroom sauce.
  9. Season with additional salt and pepper if needed.
  10. Garnish with fresh parsley before serving.

  • For a thicker sauce, simmer for a few extra minutes.
