A quick and easy recipe for super creamy mushroom chicken, perfect for a weeknight dinner.
Ingredients
- 1 lb chicken breast, cut into bite-sized pieces
- 8 oz mushrooms, sliced
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil and butter in a skillet over medium-high heat.
- Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Pour in chicken broth and heavy cream. Bring to a simmer and cook for 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
- Stir in Parmesan cheese until melted and well combined.
- Return the cooked chicken to the skillet and toss to coat in the creamy mushroom sauce.
- Season with additional salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, simmer for a few extra minutes.
- You can substitute heavy cream with half-and-half for a lighter sauce.
- Feel free to add other vegetables like spinach or onions.
