These mini meatloaf muffins are a quick, easy, and delicious way to enjoy classic meatloaf in a fun, bite-sized format. Perfect for weeknight dinners, lunches, or as an appetizer.
Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 egg
- 1/4 cup milk
- 2 tablespoons ketchup, plus more for topping
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: chopped fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with muffin liners.
- In a large bowl, gently combine ground beef, breadcrumbs, chopped onion, egg, milk, 2 tablespoons of ketchup, Worcestershire sauce, salt, and pepper. Do not overmix.
- Divide the meat mixture evenly among the prepared muffin cups, pressing gently into the bottom and up the sides.
- Top each muffin with a small dollop of ketchup.
- Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are cooked through.
- Let the muffins rest in the tin for a few minutes before carefully removing them.
- Garnish with fresh parsley if desired. Serve warm.
Notes
- For a healthier option, use lean ground beef or a mix of ground turkey and beef.
- You can add other finely chopped vegetables like bell peppers or carrots to the meat mixture.
