These mini meatloaf muffins are a quick, easy, and delicious way to enjoy classic meatloaf in a fun, bite-sized format. Perfect for weeknight dinners, lunches, or as an appetizer.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 egg
  • 1/4 cup milk
  • 2 tablespoons ketchup, plus more for topping
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: chopped fresh parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with muffin liners.
  2. In a large bowl, gently combine ground beef, breadcrumbs, chopped onion, egg, milk, 2 tablespoons of ketchup, Worcestershire sauce, salt, and pepper. Do not overmix.
  3. Divide the meat mixture evenly among the prepared muffin cups, pressing gently into the bottom and up the sides.
  4. Top each muffin with a small dollop of ketchup.
  5. Bake for 20-25 minutes, or until the internal temperature reaches 160°F (71°C) and the muffins are cooked through.
  6. Let the muffins rest in the tin for a few minutes before carefully removing them.
  7. Garnish with fresh parsley if desired. Serve warm.

  • For a healthier option, use lean ground beef or a mix of ground turkey and beef.
