Ingredients
- 1 ½ cups all-purpose flour
- ½ cup granulated sugar
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup milk
- ¼ cup vegetable oil
- 1 large egg
- ½ teaspoon vanilla extract
- ½ cup chocolate chips
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin with mini paper liners.
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the chocolate chips.
- Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

- For extra moist muffins, you can add 1/4 cup of sour cream or plain yogurt to the wet ingredients.
