Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ cup chocolate chips


Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a mini muffin tin with mini paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the chocolate chips.
  6. Spoon the batter into the prepared mini muffin cups, filling each about two-thirds full.
