A vibrant and flavorful Mediterranean Lemon Rice dish, bursting with fresh lemon zest, herbs, and savory notes. Perfect as a side or a light main course.
Ingredients
- 1 cup Arborio rice
- 2 ½ cups vegetable broth
- 1 lemon, zested and juiced
- ¼ cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 clove garlic, minced
- Salt and black pepper to taste
- Optional: ¼ cup toasted pine nuts for garnish
Instructions
- In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the Arborio rice to the saucepan and stir for 1-2 minutes until the grains are lightly toasted.
- Pour in the vegetable broth, lemon juice, and bring to a simmer.
- Reduce the heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Stir in the lemon zest and chopped parsley. Season with salt and black pepper to taste.
- Fluff the rice with a fork.
- Serve hot, garnished with toasted pine nuts if desired.
Notes
- Arborio rice is recommended for its creamy texture, but basmati or jasmine rice can be used as a substitute. Adjust cooking time accordingly.
- For a richer flavor, use chicken broth instead of vegetable broth.
- Feel free to add other Mediterranean herbs like oregano or dill.
