Ingredients

  • 1 cup Arborio rice
  • 2 ½ cups vegetable broth
  • 1 lemon, zested and juiced
  • ¼ cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • Optional: ¼ cup toasted pine nuts for garnish


Instructions

  1. In a medium saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Add the Arborio rice to the saucepan and stir for 1-2 minutes until the grains are lightly toasted.
  3. Pour in the vegetable broth, lemon juice, and bring to a simmer.
  4. Reduce the heat to low, cover, and cook for 18-20 minutes, or until the rice is tender and most of the liquid has been absorbed.
  5. Stir in the lemon zest and chopped parsley. Season with salt and black pepper to taste.
  6. Fluff the rice with a fork.
  7. Serve hot, garnished with toasted pine nuts if desired.

  • Arborio rice is recommended for its creamy texture, but basmati or jasmine rice can be used as a substitute. Adjust cooking time accordingly.
