Ingredients
- 1.5 lbs ground beef
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1/4 cup milk
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup ketchup
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, combine ground beef, breadcrumbs, onion, milk, egg, salt, and pepper. Mix well until just combined.
- Divide the mixture evenly among the muffin cups, pressing it into the bottoms and up the sides to form a cup shape.
- Spoon about 1 tablespoon of ketchup into the center of each meatloaf muffin.
- Bake for 25-30 minutes, or until the internal temperature reaches 160°F (71°C) and the meatloaf is cooked through.
- Let the meatloaf muffins rest in the tin for a few minutes before removing.

- For a different flavor profile, you can add other seasonings like garlic powder, Worcestershire sauce, or Italian seasoning to the meat mixture.
- Ensure not to overmix the meat mixture, as this can result in a tough meatloaf.
