Description

Mashed cauliflower is a healthy and easy alternative to mashed potatoes, featuring butter and herbs for flavor.


Ingredients

  • 1 large head of cauliflower
  • 4 tablespoons unsalted butter
  • 1/4 cup heavy cream
  • 1/4 cup shredded Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/4 cup fresh chives (chopped)
  • 1 tablespoon fresh thyme leaves


Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Chop the cauliflower into florets.
  3. Add the cauliflower florets to the boiling water and cook until they are fork-tender, about 10–15 minutes.
  4. Drain the cauliflower well and transfer it to a food processor or a large bowl.
  5. Add the butter, heavy cream, Parmesan cheese, salt, and pepper.
  6. If using a food processor, process until smooth. If using a bowl, use an immersion blender or a potato masher, mashing until the desired consistency is reached.
  7. Stir in the fresh chives and thyme leaves.
  8. Taste and adjust seasonings as needed.
  9. Serve warm.

Notes

  • If you don’t have a food processor, you can use an immersion blender or a potato masher, although the texture will be less smooth.
  • For a richer flavor, roast the cauliflower before mashing instead of boiling it.
  • You can substitute other herbs like parsley, rosemary, or dill.
  • To make this dish vegan, use plant-based butter and cream, and omit the Parmesan cheese (or use a vegan alternative).
