Description
Mashed cauliflower is a healthy and easy alternative to mashed potatoes, featuring butter and herbs for flavor.
Ingredients
- 1 large head of cauliflower
- 4 tablespoons unsalted butter
- 1/4 cup heavy cream
- 1/4 cup shredded Parmesan cheese
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/4 cup fresh chives (chopped)
- 1 tablespoon fresh thyme leaves
Instructions
- Fill a large pot with water and bring it to a boil.
- Chop the cauliflower into florets.
- Add the cauliflower florets to the boiling water and cook until they are fork-tender, about 10–15 minutes.
- Drain the cauliflower well and transfer it to a food processor or a large bowl.
- Add the butter, heavy cream, Parmesan cheese, salt, and pepper.
- If using a food processor, process until smooth. If using a bowl, use an immersion blender or a potato masher, mashing until the desired consistency is reached.
- Stir in the fresh chives and thyme leaves.
- Taste and adjust seasonings as needed.
- Serve warm.
Notes
- If you don’t have a food processor, you can use an immersion blender or a potato masher, although the texture will be less smooth.
- For a richer flavor, roast the cauliflower before mashing instead of boiling it.
- You can substitute other herbs like parsley, rosemary, or dill.
- To make this dish vegan, use plant-based butter and cream, and omit the Parmesan cheese (or use a vegan alternative).
