Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tbsp butter
- 1 small yellow onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes (optional)
- 1.5 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and freshly ground black pepper to taste
- Cooked pasta or rice, for serving
Instructions
- Season chicken pieces generously with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Add chicken and cook until golden brown on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
- Stir in minced garlic, sun-dried tomatoes, oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth.
- Add spinach and cook until wilted, about 1-2 minutes.
- Return the cooked chicken to the skillet and stir to coat with the sauce.
- Season with salt and pepper to taste.
- Serve immediately over cooked pasta or rice.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- Adjust the red pepper flakes to your spice preference.
- If the sauce is too thick, you can add a splash of chicken broth or milk to thin it out.
- Garnish with fresh basil or parsley for a burst of freshness.
