Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 1.5 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and freshly ground black pepper to taste
  • Cooked pasta or rice, for serving


Instructions

  1. Season chicken pieces generously with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add chicken and cook until golden brown on all sides and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and cook until softened, about 3-4 minutes.
  5. Stir in minced garlic, sun-dried tomatoes, oregano, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  6. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce is smooth.
  7. Add spinach and cook until wilted, about 1-2 minutes.
  8. Return the cooked chicken to the skillet and stir to coat with the sauce.
  9. Season with salt and pepper to taste.
  10. Serve immediately over cooked pasta or rice.
