Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and freshly ground black pepper, to taste
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1 1/2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped sun-dried tomatoes (oil-packed, drained)
  • 1/4 cup chopped fresh basil
  • 8 oz pasta (such as penne, fettuccine, or rotini)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken pieces with salt and pepper, then add to the skillet and cook until browned on all sides and cooked through. Remove chicken from the skillet and set aside.
  2. Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
  3. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  4. Stir in Parmesan cheese, sun-dried tomatoes, and basil. Season with salt and pepper to taste.
  5. Add the cooked chicken back to the skillet.
  6. Add the pasta to the skillet, ensuring it is submerged in the sauce. Cover and cook according to pasta package directions, stirring occasionally, until pasta is al dente and sauce has thickened. If the sauce becomes too thick, add a splash more chicken broth or water.
  7. Serve immediately, garnished with extra basil and Parmesan cheese if desired.

  • You can use chicken thighs instead of breasts if preferred.
