Ingredients
- 1 delicata squash
- 1 tablespoon olive oil
- 1 tablespoon maple syrup

- 1/8 teaspoon black pepper

Instructions
- Preheat oven to 400°F (200°C).
- Slice the delicata squash in half lengthwise and scoop out the seeds.
- Slice the squash halves into 1/2-inch thick pieces.
- In a medium bowl, toss the squash slices with olive oil, maple syrup, salt, and pepper until well coated.
- Spread the squash in a single layer on a parchment-lined baking sheet.
- Roast for 15-20 minutes, or until the squash is tender and lightly caramelized.
- Remove from oven and immediately sprinkle with crumbled goat cheese.
- Serve warm.
Notes
- Delicata squash is thin-skinned and does not need to be peeled.
