Ingredients
- 2 cups all-purpose flour
- 1.5 cups granulated sugar
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1 cup buttermilk
- 0.5 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 0.5 cup maple syrup
- 6-8 slices bacon, cooked until crispy and crumbled
- For the Frosting:
- 1 cup unsalted butter, softened
- 3 cups powdered sugar
- 0.25 cup maple syrup
- 2-3 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, whisk together flour, sugar, baking soda, and salt.
- In a separate bowl, whisk together buttermilk, melted butter, eggs, and vanilla extract.
- Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
- Stir in the maple syrup until fully incorporated.
- Gently fold in half of the crumbled bacon.
- Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.
- While the cupcakes cool, prepare the frosting. In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar, alternating with the maple syrup and milk, beating until smooth and fluffy. Stir in the vanilla extract.
- Once the cupcakes are completely cool, frost them generously.
- Top each frosted cupcake with the remaining crumbled bacon.
Notes
- Ensure bacon is thoroughly cooked and cooled before crumbling to achieve maximum crispiness.
- Adjust milk in frosting for desired consistency.
- For a richer maple flavor, consider using dark or robust maple syrup.
