Ingredients

  • 4 large baking potatoes
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh chives
  • 1/4 cup cooked bacon bits


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the potatoes thoroughly. Prick each potato a few times with a fork.
  3. Rub the potatoes with olive oil and season with salt and pepper.
  4. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
  5. Remove the potatoes from the oven and let them cool slightly.
  6. Cut each potato in half lengthwise. Gently fluff the insides with a fork.
