Ingredients
- 4 large baking potatoes
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped fresh chives
- 1/4 cup cooked bacon bits
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Prick each potato a few times with a fork.
- Rub the potatoes with olive oil and season with salt and pepper.
- Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.
- Remove the potatoes from the oven and let them cool slightly.
- Cut each potato in half lengthwise. Gently fluff the insides with a fork.
- Top each potato half generously with shredded cheddar cheese, sour cream, bacon bits, and chives.
- Serve immediately.
Notes
- For crispier skin, rub the potatoes with a little more olive oil.
- You can add other toppings like chili, pulled pork, or steamed broccoli.
- If you don’t have fresh chives, you can use dried chives or green onions.
