  • 2 lbs potatoes (Yukon Gold or Russet), scrubbed and cut into 1-inch pieces
  • 1/4 cup olive oil
  • 1/4 cup lemon juice, freshly squeezed
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
  3. Add the cut potatoes to the bowl and toss until they are evenly coated with the mixture.
  4. Spread the potatoes in a single layer on a large baking sheet.
  5. Roast for 30-40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
  6. Remove the potatoes from the oven and immediately sprinkle with the crumbled feta cheese.
  7. Toss gently to distribute the feta. The residual heat will soften the cheese slightly.
  8. Garnish with fresh parsley, if desired, and serve hot.

  • For extra crispy potatoes, ensure they are spread in a single layer without overcrowding the baking sheet. Use two sheets if necessary.
