A simple and delicious recipe for roasted potatoes seasoned with lemon and feta cheese.
Ingredients
- 2 lbs potatoes (Yukon Gold or Russet), scrubbed and cut into 1-inch pieces
- 1/4 cup olive oil
- 1/4 cup lemon juice, freshly squeezed
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped (for garnish, optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, lemon juice, minced garlic, dried oregano, salt, and pepper.
- Add the cut potatoes to the bowl and toss until they are evenly coated with the mixture.
- Spread the potatoes in a single layer on a large baking sheet.
- Roast for 30-40 minutes, stirring halfway through, until the potatoes are tender and golden brown.
- Remove the potatoes from the oven and immediately sprinkle with the crumbled feta cheese.
- Toss gently to distribute the feta. The residual heat will soften the cheese slightly.
- Garnish with fresh parsley, if desired, and serve hot.
Notes
- For extra crispy potatoes, ensure they are spread in a single layer without overcrowding the baking sheet. Use two sheets if necessary.
- If you prefer a stronger lemon flavor, add a bit of lemon zest along with the juice.
