Ingredients
- 1 lb kielbasa sausage, sliced
- 1.5 lbs potatoes, cubed
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add kielbasa slices and cook until browned on both sides. Remove from skillet and set aside.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Add cubed potatoes, dried thyme, salt, and pepper to the skillet.
- Stir well to combine and cook for 15-20 minutes, stirring occasionally, until potatoes are tender and browned.
- Return the cooked kielbasa to the skillet and stir to combine with the potatoes and onions.
- Cook for another 5 minutes, or until the kielbasa is heated through.
- Serve hot.
