Ingredients

  • 1 lb kielbasa sausage, sliced
  • 1.5 lbs potatoes, cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add kielbasa slices and cook until browned on both sides. Remove from skillet and set aside.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Add cubed potatoes, dried thyme, salt, and pepper to the skillet.
  6. Stir well to combine and cook for 15-20 minutes, stirring occasionally, until potatoes are tender and browned.
  7. Return the cooked kielbasa to the skillet and stir to combine with the potatoes and onions.
  8. Cook for another 5 minutes, or until the kielbasa is heated through.
  9. Serve hot.
