Ingredients

  • 1 ½ cups almond flour
  • ½ cup shredded unsweetened coconut
  • ½ cup chopped pecans, divided
  • ⅓ cup erythritol (or your preferred keto sweetener)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup sugar-free cranberry sauce (homemade or store-bought)
  • ½ cup sugar-free chocolate chips (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. In a medium bowl, combine almond flour, shredded coconut, ¼ cup of the chopped pecans, erythritol, cinnamon, and salt.
  3. Pour the melted butter over the dry ingredients and stir until well combined and the mixture resembles wet sand.
  4. Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
