Ingredients
- 1 ½ cups almond flour
- ½ cup shredded unsweetened coconut
- ½ cup chopped pecans, divided
- ⅓ cup erythritol (or your preferred keto sweetener)
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter, melted
- ¾ cup sugar-free cranberry sauce (homemade or store-bought)
- ½ cup sugar-free chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.
- In a medium bowl, combine almond flour, shredded coconut, ¼ cup of the chopped pecans, erythritol, cinnamon, and salt.
- Pour the melted butter over the dry ingredients and stir until well combined and the mixture resembles wet sand.
- Press the mixture evenly into the bottom of the prepared baking pan to form the crust.
- Bake the crust for 10-12 minutes, or until lightly golden brown. Remove from oven.
- Spread the sugar-free cranberry sauce evenly over the baked crust.
- Sprinkle the remaining ¼ cup chopped pecans and sugar-free chocolate chips (if using) over the cranberry sauce.
- Return the pan to the oven and bake for another 15-20 minutes, or until the edges are golden and the center is set.
- Let the bars cool completely in the pan on a wire rack before cutting into squares.
- Refrigerate for at least 30 minutes before serving to allow them to set fully.
