Kashmiri Pink Chai, also known as Noon Chai or Sheer Chai, is a traditional, creamy, and slightly salty tea from the Kashmir Valley, renowned for its distinctive pink hue and health benefits, particularly for skin radiance.
Ingredients
- 1 cup water
- 1 cup milk
- 2 green cardamom pods
- 1/4 teaspoon baking soda
- Pinch of salt
- 2-3 tablespoons sugar (or to taste)
- 1/4 teaspoon crushed pistachios
- 1/4 teaspoon crushed almonds
Instructions
- In a saucepan, combine water, green cardamom pods, and baking soda. Bring to a boil and simmer for 2-3 minutes.
- Add milk and salt to the saucepan. Bring the mixture to a gentle simmer, stirring constantly.
- Continue to simmer and stir for about 5-7 minutes, allowing the tea to thicken slightly and develop a creamy texture.
- While stirring, gently whisk the tea back and forth to incorporate air and help it achieve its characteristic pink color.
- Add sugar and stir until dissolved.
- Pour the Kashmiri Pink Chai into cups.
- Garnish with crushed pistachios and almonds.
- Serve hot.
Notes
- The baking soda reacts with milk and cardamom to create the pink color. Don’t use too much baking soda as it can affect the taste.
- Adjust sugar and salt to your personal preference.
- For a richer flavor, use full-fat milk.
