Kashmiri Pink Chai, also known as Noon Chai or Sheer Chai, is a traditional, creamy, and slightly salty tea from the Kashmir Valley, renowned for its distinctive pink hue and health benefits, particularly for skin radiance.


Ingredients

  • 1 cup water
  • 1 cup milk
  • 2 green cardamom pods
  • 1/4 teaspoon baking soda
  • Pinch of salt
  • 2-3 tablespoons sugar (or to taste)
  • 1/4 teaspoon crushed pistachios
  • 1/4 teaspoon crushed almonds


Instructions

  1. In a saucepan, combine water, green cardamom pods, and baking soda. Bring to a boil and simmer for 2-3 minutes.
  2. Add milk and salt to the saucepan. Bring the mixture to a gentle simmer, stirring constantly.
  3. Continue to simmer and stir for about 5-7 minutes, allowing the tea to thicken slightly and develop a creamy texture.
  4. While stirring, gently whisk the tea back and forth to incorporate air and help it achieve its characteristic pink color.
  5. Add sugar and stir until dissolved.
  6. Pour the Kashmiri Pink Chai into cups.
  7. Garnish with crushed pistachios and almonds.
  8. Serve hot.

Notes

  • The baking soda reacts with milk and cardamom to create the pink color. Don’t use too much baking soda as it can affect the taste.
  • Adjust sugar and salt to your personal preference.
  • For a richer flavor, use full-fat milk.
