Ingredients
- 1 tablespoon olive oil
- 1 cup chopped yellow onion
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 8 cups chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup small pasta (such as ditalini or orzo)
- 1/2 cup cooked shredded chicken (optional)
- 1/4 cup chopped fresh parsley
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Pour in chicken broth and diced tomatoes. Stir in oregano, basil, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
- Add pasta and cooked chicken (if using). Cook according to pasta package directions, or until al dente.
- Stir in fresh parsley just before serving.
Notes
- For a vegetarian option, omit the chicken and use vegetable broth.
- Add a pinch of red pepper flakes for a touch of heat.
- This soup freezes well. Let it cool completely before transferring to freezer-safe containers.
