Ingredients

  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup small pasta (such as ditalini or orzo)
  • 1/2 cup cooked shredded chicken (optional)
  • 1/4 cup chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery. Cook until softened, about 5-7 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Pour in chicken broth and diced tomatoes. Stir in oregano, basil, salt, and pepper.
  4. Bring the soup to a boil, then reduce heat and simmer for 15 minutes to allow flavors to meld.
  5. Add pasta and cooked chicken (if using). Cook according to pasta package directions, or until al dente.
  6. Stir in fresh parsley just before serving.

Notes

  • For a vegetarian option, omit the chicken and use vegetable broth.
  • Add a pinch of red pepper flakes for a touch of heat.
  • This soup freezes well. Let it cool completely before transferring to freezer-safe containers.
