Ingredients

  • 1 head romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/2 cup bell pepper (any color), diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted and halved
  • 4 oz salami, chopped
  • 4 oz pepperoni, chopped
  • 4 oz provolone cheese, cubed
  • 1/4 cup fresh parsley, chopped
  • For the dressing:
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste


Instructions

  1. In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, salami, pepperoni, provolone cheese, and fresh parsley.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.
  3. Pour the dressing over the salad ingredients.
  4. Toss gently to coat everything evenly.
  5. Serve immediately.
