Ingredients
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/2 cup bell pepper (any color), diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 4 oz salami, chopped
- 4 oz pepperoni, chopped
- 4 oz provolone cheese, cubed
- 1/4 cup fresh parsley, chopped
- For the dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tsp Dijon mustard
- 1 clove garlic, minced
- 1/2 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, cucumber, bell pepper, red onion, Kalamata olives, salami, pepperoni, provolone cheese, and fresh parsley.
- In a small bowl or jar, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, dried oregano, salt, and pepper until well combined.
- Pour the dressing over the salad ingredients.
- Toss gently to coat everything evenly.
- Serve immediately.
Notes
- For a vegetarian option, omit the salami and pepperoni and add chickpeas or cannellini beans.
- You can customize the vegetables based on your preference.
