Ingredients
- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup honey
- 2 tablespoons sriracha (or other hot sauce)
- 1 tablespoon apple cider vinegar
- 1 clove garlic, minced
- 1 teaspoon cornstarch (optional, for thickening)
- 1 tablespoon water (if using cornstarch)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, toss chicken pieces with olive oil, salt, and pepper.
- Spread chicken in a single layer on a baking sheet.
- Bake for 15-20 minutes, or until chicken is cooked through and lightly browned.
- While chicken is baking, prepare the hot honey sauce: In a small saucepan, combine honey, sriracha, apple cider vinegar, and minced garlic.
- Heat over medium heat, stirring, until the honey is melted and the sauce is well combined.
- If you want a thicker sauce, whisk together cornstarch and water in a small bowl until smooth. Add this slurry to the simmering sauce and stir until thickened.
- Once the chicken is cooked, remove it from the oven.
- Pour the hot honey sauce over the chicken and toss to coat.
- Return the chicken to the oven for another 2-3 minutes to allow the sauce to caramelize slightly.
- Garnish with fresh parsley before serving.
