Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup honey
  • 2 tablespoons sriracha (or other hot sauce)
  • 1 tablespoon apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon cornstarch (optional, for thickening)
  • 1 tablespoon water (if using cornstarch)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss chicken pieces with olive oil, salt, and pepper.
  3. Spread chicken in a single layer on a baking sheet.
  4. Bake for 15-20 minutes, or until chicken is cooked through and lightly browned.
  5. While chicken is baking, prepare the hot honey sauce: In a small saucepan, combine honey, sriracha, apple cider vinegar, and minced garlic.
  6. Heat over medium heat, stirring, until the honey is melted and the sauce is well combined.
  7. If you want a thicker sauce, whisk together cornstarch and water in a small bowl until smooth. Add this slurry to the simmering sauce and stir until thickened.
  8. Once the chicken is cooked, remove it from the oven.
  9. Pour the hot honey sauce over the chicken and toss to coat.
  10. Return the chicken to the oven for another 2-3 minutes to allow the sauce to caramelize slightly.
  11. Garnish with fresh parsley before serving.
