Ingredients
- 1.5 lbs salmon fillet
- 1/2 cup panko breadcrumbs
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh dill
- 1 tablespoon chopped fresh chives
- 1 clove garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, combine panko breadcrumbs, parsley, dill, chives, minced garlic, salt, and pepper.
- In a separate small bowl, whisk together olive oil and lemon juice.
- Place the salmon fillet on the prepared baking sheet. Brush the top of the salmon with the olive oil and lemon juice mixture.
- Press the herb and breadcrumb mixture evenly onto the top of the salmon, creating a crust.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Let it rest for a few minutes before serving.
