Description

A flavorful and easy-to-make herb-crusted salmon recipe that is perfect for a weeknight dinner or a special occasion. The salmon is coated in a vibrant mixture of fresh herbs and breadcrumbs, then baked to flaky perfection.

Ingredients

  • 1.5 lbs salmon fillet
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 1 tablespoon chopped fresh chives
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and freshly ground black pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, combine panko breadcrumbs, parsley, dill, chives, minced garlic, salt, and pepper.
  3. In a separate small bowl, whisk together olive oil and lemon juice.
  4. Place the salmon fillet on the prepared baking sheet. Brush the top of the salmon with the olive oil and lemon juice mixture.
  5. Press the herb and breadcrumb mixture evenly onto the top of the salmon, creating a crust.
  6. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  7. Let it rest for a few minutes before serving.

Notes

  • You can substitute other fresh herbs like thyme, rosemary, or basil.
  • For a spicier crust, add a pinch of red pepper flakes to the breadcrumb mixture.
