Ingredients

  • 8 ounces pasta (such as rotini, penne, or farfalle)
  • 1 large cucumber, diced
  • 1/2 red onion, finely diced
  • 1/4 cup fresh dill, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey or maple syrup (optional)
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked pasta, diced cucumber, red onion, dill, and parsley.
