A refreshing and easy-to-make pasta salad featuring crisp cucumbers, fresh herbs, and a light vinaigrette. Perfect for a healthy lunch or side dish.
Ingredients
- 8 ounces pasta (such as rotini, penne, or farfalle)
- 1 large cucumber, diced
- 1/2 red onion, finely diced
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon honey or maple syrup (optional)
- Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked pasta, diced cucumber, red onion, dill, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey (if using), salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to combine.
- Chill for at least 30 minutes before serving to allow the flavors to meld.
Notes
- For a creamier salad, you can add a tablespoon or two of plain Greek yogurt or mayonnaise to the dressing.
- Add other vegetables like cherry tomatoes, bell peppers, or olives for extra flavor and nutrients.
- This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
