Instructions

  1. Preheat your air fryer to 375°F (190°C).
  2. In a medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
  3. In a separate bowl, whisk together the almond milk, melted coconut oil, vanilla extract, and egg.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. The batter will be thick. You can either spoon small portions into the air fryer basket or use a piping bag to create bite-sized churros. Aim for about 1-inch pieces.
  6. Arrange the churro bites in a single layer in the air fryer basket, ensuring they don’t touch. You may need to cook in batches.
  7. Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
  8. While the churros are cooking, mix the 1/4 cup sugar and 1 teaspoon cinnamon in a shallow dish.
  9. Once cooked, immediately toss the warm churro bites in the cinnamon-sugar mixture until evenly coated.
  10. Serve warm.
