Ingredients
- 1 cup all-purpose flour

- 1 teaspoon vanilla extract
- 1 egg
- 1/2 teaspoon ground cinnamon

Instructions
- Preheat your air fryer to 375°F (190°C).
- In a medium bowl, whisk together the flour, 1/4 cup sugar, baking powder, and salt.
- In a separate bowl, whisk together the almond milk, melted coconut oil, vanilla extract, and egg.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- The batter will be thick. You can either spoon small portions into the air fryer basket or use a piping bag to create bite-sized churros. Aim for about 1-inch pieces.
- Arrange the churro bites in a single layer in the air fryer basket, ensuring they don’t touch. You may need to cook in batches.
- Air fry for 8-10 minutes, flipping halfway through, until golden brown and cooked through.
- While the churros are cooking, mix the 1/4 cup sugar and 1 teaspoon cinnamon in a shallow dish.
- Once cooked, immediately toss the warm churro bites in the cinnamon-sugar mixture until evenly coated.
- Serve warm.
