Ingredients

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, fresh parsley


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
  3. Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
  4. Stir in minced garlic and broccoli florets and cook for another 2-3 minutes until garlic is fragrant and broccoli is slightly tender.
  5. Pour in the diced tomatoes (with their juice) and add Italian seasoning, salt, and pepper. Stir to combine.
  6. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until broccoli is tender and flavors have melded.
  7. Serve hot, garnished with optional toppings if desired.
