Ingredients
- 1 lb ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add chopped onion and bell pepper to the skillet and cook until softened, about 5-7 minutes.
- Stir in minced garlic and broccoli florets and cook for another 2-3 minutes until garlic is fragrant and broccoli is slightly tender.
- Pour in the diced tomatoes (with their juice) and add Italian seasoning, salt, and pepper. Stir to combine.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until broccoli is tender and flavors have melded.
- Serve hot, garnished with optional toppings if desired.
