A simple and delicious recipe for classic ground beef enchiladas, perfect for a weeknight meal or a crowd-pleasing dish.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can (10 ounces) red enchilada sauce
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 corn tortillas
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- Optional toppings: sour cream, chopped cilantro, diced tomatoes, sliced jalapeños
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, brown the ground beef and onion over medium heat. Drain off any excess grease.
- Stir in the enchilada sauce, chili powder, cumin, salt, and pepper. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Warm the tortillas slightly to make them pliable (you can do this by wrapping them in a damp paper towel and microwaving for 30 seconds, or by quickly dipping them in warm enchilada sauce).
- Spoon about 1/4 cup of the beef mixture into the center of each tortilla.
- Roll up the tortillas and place them seam-side down in a 9×13 inch baking dish.
- Pour any remaining enchilada sauce over the rolled enchiladas.
- Sprinkle the Monterey Jack and cheddar cheeses evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let stand for 5 minutes before serving. Serve with your favorite toppings.
Notes
- For a spicier enchilada, add a pinch of cayenne pepper to the beef mixture.
- If you prefer a milder flavor, use a mild enchilada sauce.
- You can prepare the beef mixture ahead of time and refrigerate until ready to assemble.
