Description

A comforting and easy ground beef casserole with potatoes, perfect for a weeknight meal.


Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1/2 cup milk
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups thinly sliced potatoes (about 2 medium)
  • 1 cup shredded cheddar cheese


Instructions

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. In a large skillet, brown the ground beef over medium heat; drain off any excess fat. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Stir in the cream of mushroom soup, milk, parsley, salt, and pepper.
  4. Layer half of the sliced potatoes in the bottom of a greased 9×13 inch baking dish.
  5. Pour the beef mixture over the potatoes.
  6. Top with the remaining sliced potatoes and sprinkle with cheddar cheese.
  7. Cover with foil and bake for 45 minutes.
  8. Remove foil and bake for an additional 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.

Notes

  • For a crispier topping, you can add a layer of crushed crackers or breadcrumbs over the cheese in the last 15 minutes of baking.
  • Feel free to add other vegetables like peas or carrots to the beef mixture.
  • If you prefer a creamier casserole, you can add a bit more milk or a dollop of sour cream to the soup mixture.
