Description
A comforting and easy ground beef casserole with potatoes, perfect for a weeknight meal.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (10.75 ounce) can condensed cream of mushroom soup
- 1/2 cup milk
- 1/4 cup chopped fresh parsley
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups thinly sliced potatoes (about 2 medium)
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375 degrees F (190 degrees C).
- In a large skillet, brown the ground beef over medium heat; drain off any excess fat. Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the cream of mushroom soup, milk, parsley, salt, and pepper.
- Layer half of the sliced potatoes in the bottom of a greased 9×13 inch baking dish.
- Pour the beef mixture over the potatoes.
- Top with the remaining sliced potatoes and sprinkle with cheddar cheese.
- Cover with foil and bake for 45 minutes.
- Remove foil and bake for an additional 15-20 minutes, or until potatoes are tender and cheese is melted and bubbly.
Notes
- For a crispier topping, you can add a layer of crushed crackers or breadcrumbs over the cheese in the last 15 minutes of baking.
- Feel free to add other vegetables like peas or carrots to the beef mixture.
- If you prefer a creamier casserole, you can add a bit more milk or a dollop of sour cream to the soup mixture.
