A quick and simple ground beef burrito bowl recipe that’s perfect for weeknight dinners. Packed with flavor and customizable to your liking.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 cup water
- 1 cup cooked rice
- 1 cup canned black beans, rinsed and drained
- 1 cup corn (fresh, frozen, or canned)
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
- Optional toppings: sour cream, guacamole, chopped lettuce, diced tomatoes, jalapeños
Instructions
- Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
- Assemble the burrito bowls: Divide the cooked rice among serving bowls.
- Top the rice with the seasoned ground beef, black beans, and corn.
- Add salsa and shredded cheese.
- Serve immediately with your favorite optional toppings.
Notes
- For a healthier option, use lean ground beef and low-fat cheese.
- You can substitute ground turkey or chicken for the ground beef.
- If you don’t have taco seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, and onion powder.
- Prepare ahead of time by cooking the ground beef mixture and rice and storing them separately in the refrigerator. Assemble just before serving.
