Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup water
  • 1 cup cooked rice
  • 1 cup canned black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • Optional toppings: sour cream, guacamole, chopped lettuce, diced tomatoes, jalapeños


Instructions

  1. Brown the ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Stir in the taco seasoning and water. Bring to a simmer and cook for 5-7 minutes, or until the sauce has thickened.
  3. Assemble the burrito bowls: Divide the cooked rice among serving bowls.
  4. Top the rice with the seasoned ground beef, black beans, and corn.
  5. Add salsa and shredded cheese.
