Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes
- 4 cups vegetable broth
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Optional: Heavy cream or croutons for serving
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes, vegetable broth, basil, and oregano. Bring to a boil, then reduce heat and simmer, covered, for at least 20 minutes to allow flavors to meld.
- Season with salt and pepper to taste.
- For a smoother soup, you can use an immersion blender to blend the soup until desired consistency is reached.
- Serve hot, with optional heavy cream or croutons if desired.
