Ingredients

  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional: Heavy cream or croutons for serving


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Stir in crushed tomatoes, vegetable broth, basil, and oregano. Bring to a boil, then reduce heat and simmer, covered, for at least 20 minutes to allow flavors to meld.
  4. Season with salt and pepper to taste.
