Ingredients
- 1 medium spaghetti squash
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and scoop out the seeds.
- Place the squash halves cut-side down on a baking sheet.
- Roast for 30-45 minutes, or until tender when pierced with a fork.
- Let the squash cool slightly, then use a fork to scrape out the spaghetti-like strands.
- In a large bowl, toss the spaghetti squash strands with olive oil, minced garlic, Parmesan cheese, salt, and pepper.
