Ingredients
- 1 and 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- For the Frosting:
- 1 cup (2 sticks) unsalted butter, softened
- 4 cups powdered sugar
- 1/2 cup unsweetened cocoa powder
- 1/3 cup milk
- 1 teaspoon vanilla extract
- For Decoration:
- Green food coloring
- Chocolate sprinkles
- Small candy mushrooms or edible flowers
Instructions
- Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
- Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
- While the cupcakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy.
- Gradually add the powdered sugar and cocoa powder, alternating with the milk, beating until smooth and fluffy. Stir in the vanilla extract.
- Tint a portion of the frosting green using green food coloring to resemble grass.
- Once the cupcakes are completely cooled, frost them with the white frosting.
- Decorate the frosted cupcakes with the green frosting, chocolate sprinkles (to resemble dirt), and candy mushrooms or edible flowers to create a forest scene.
Notes
- Ensure all ingredients are at room temperature for best results when making the frosting.
- You can substitute almond extract for vanilla extract for a different flavor profile.
