Description

These Forest Cupcakes Delight are a magical treat, perfect for any occasion. They combine a moist chocolate cake base with a rich, creamy frosting and a touch of woodland charm.

Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • For the Frosting:
  • 1 cup (2 sticks) unsalted butter, softened
  • 4 cups powdered sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • For Decoration:
  • Green food coloring
  • Chocolate sprinkles
  • Small candy mushrooms or edible flowers

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full.
  6. Bake for 18-20 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  8. While the cupcakes are cooling, prepare the frosting. In a large bowl, beat the softened butter until creamy.
  9. Gradually add the powdered sugar and cocoa powder, alternating with the milk, beating until smooth and fluffy. Stir in the vanilla extract.
  10. Tint a portion of the frosting green using green food coloring to resemble grass.
  11. Once the cupcakes are completely cooled, frost them with the white frosting.
  12. Decorate the frosted cupcakes with the green frosting, chocolate sprinkles (to resemble dirt), and candy mushrooms or edible flowers to create a forest scene.

Notes

  • Ensure all ingredients are at room temperature for best results when making the frosting.
  • You can substitute almond extract for vanilla extract for a different flavor profile.
  • For a richer chocolate flavor, use dark cocoa powder.
  • Store frosted cupcakes in an airtight container at room temperature for up to 3 days.
