Ingredients
- 1 lb boneless, skinless chicken thighs
- 4 cups chicken broth
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon sriracha
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 8 oz ramen noodles
- 1 cup chopped bok choy
- 2 green onions, thinly sliced
- 1 soft-boiled egg, halved (optional)
- Sesame seeds for garnish (optional)
Instructions
- Cut chicken thighs into bite-sized pieces.
- In a large pot, combine chicken broth, soy sauce, gochujang, sriracha, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat.
- Add the chicken pieces to the simmering broth and cook until thoroughly cooked through, about 5-7 minutes.
- Add the ramen noodles and bok choy to the pot. Cook according to noodle package directions, usually 3-5 minutes, until noodles are tender and bok choy is wilted.
- Ladle the ramen into bowls.
- Garnish with sliced green onions, a soft-boiled egg (if using), and sesame seeds (if using).
Notes
- Adjust the amount of gochujang and sriracha to control the spice level.
- For a deeper flavor, you can marinate the chicken in a mixture of soy sauce, garlic, and ginger for 30 minutes before cooking.
- Other vegetables like mushrooms, spinach, or bean sprouts can be added.
