  • 1 inch ginger, grated
  • 8 oz ramen noodles
  • 1 cup chopped bok choy
  • 2 green onions, thinly sliced
  • 1 soft-boiled egg, halved (optional)
  • Sesame seeds for garnish (optional)


Instructions

  1. Cut chicken thighs into bite-sized pieces.
  2. In a large pot, combine chicken broth, soy sauce, gochujang, sriracha, sesame oil, minced garlic, and grated ginger. Bring to a simmer over medium heat.
  3. Add the chicken pieces to the simmering broth and cook until thoroughly cooked through, about 5-7 minutes.
  4. Add the ramen noodles and bok choy to the pot. Cook according to noodle package directions, usually 3-5 minutes, until noodles are tender and bok choy is wilted.
