Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup fideo pasta
  • 2 medium potatoes, peeled and diced
  • 1/4 cup chopped fresh cilantro, for garnish (optional)


Instructions

  1. In a large pot or Dutch oven, cook the ground beef over medium heat until browned. Drain off any excess grease.
  2. Add the olive oil to the pot, then add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Stir in the diced tomatoes, beef broth, chili powder, cumin, salt, and pepper. Bring the mixture to a boil.
  4. Add the fideo pasta and diced potatoes to the pot. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the pasta is tender and the potatoes are cooked through, stirring occasionally to prevent sticking.
  5. Taste and adjust seasoning if needed.
  6. Serve hot, garnished with fresh cilantro if desired.

Notes

  • For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño along with the onion.
  • You can substitute chicken broth for beef broth if preferred.
  • If you don’t have fideo, you can break spaghetti or vermicelli into small pieces to use instead.
