Ingredients
- 2 cups frozen strawberries
- 1/2 cup pineapple chunks (frozen or canned, drained)
- 1/4 cup coconut milk (full-fat, from a can, chilled)
- 1 tablespoon honey or maple syrup (optional, for extra sweetness)
Instructions
- Combine the frozen strawberries, pineapple chunks, and chilled coconut milk in a high-powered blender or food processor.
- Blend on high speed until the mixture is smooth and creamy, resembling soft-serve ice cream. You may need to stop and scrape down the sides a few times.
- If using, add the honey or maple syrup and blend again briefly to incorporate.
- For a thicker consistency, you can add a few more frozen strawberries or a tablespoon of ice. For a thinner consistency, add a splash more coconut milk.
- Serve immediately for a soft-serve texture, or transfer to an airtight container and freeze for at least 2-3 hours for a firmer consistency.
