Ingredients
- 1 lb breakfast sausage
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 large eggs
- 1 cup milk
- 1/4 cup melted butter
- 1/2 cup shredded cheddar cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
- In a large skillet, cook the breakfast sausage until browned and crumbled. Drain off any excess grease.
- In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
- In a separate bowl, whisk together the eggs, milk, and melted butter.
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the cooked sausage and shredded cheddar cheese (if using).
- Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For a spicier kick, use a spicy breakfast sausage.
- You can add other vegetables like diced onions or bell peppers to the batter.
