Ingredients

  • 1 lb breakfast sausage
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs
  • 1 cup milk
  • 1/4 cup melted butter
  • 1/2 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  2. In a large skillet, cook the breakfast sausage until browned and crumbled. Drain off any excess grease.
  3. In a medium bowl, whisk together the flour, baking powder, salt, and pepper.
  4. In a separate bowl, whisk together the eggs, milk, and melted butter.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Gently fold in the cooked sausage and shredded cheddar cheese (if using).
  7. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
