A delicious and easy recipe for bite-sized lemon cheesecakes, perfect for a quick dessert or party treat.
Ingredients
- 2 (8 ounce) packages cream cheese, softened
- 1 cup white sugar
- 1/2 cup butter, melted
- 4 eggs
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup crushed graham crackers
- 1/4 cup confectioners’ sugar (for dusting)
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper.
- In a large bowl, beat the softened cream cheese and white sugar until smooth.
- Beat in the melted butter, eggs, lemon juice, and vanilla extract until well combined.
- In a separate bowl, mix the flour and crushed graham crackers. Gradually add the dry mixture to the cream cheese mixture and mix until just combined.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
- Let the cheesecake cool completely, then chill in the refrigerator for at least 3 hours before cutting into bite-sized squares.
- Dust with confectioners’ sugar before serving.
Notes
- Ensure the cream cheese is fully softened for a smooth batter.
- The use of parchment paper makes removal and cleanup much easier.
