Description

Ingredients

  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 4 eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup crushed graham crackers
  • 1/4 cup confectioners’ sugar (for dusting)


Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a 9×13 inch baking pan with parchment paper.
  2. In a large bowl, beat the softened cream cheese and white sugar until smooth.
  3. Beat in the melted butter, eggs, lemon juice, and vanilla extract until well combined.
  4. In a separate bowl, mix the flour and crushed graham crackers. Gradually add the dry mixture to the cream cheese mixture and mix until just combined.
  5. Pour the batter into the prepared baking pan and spread evenly.
  6. Bake for 30-35 minutes, or until the edges are lightly golden and the center is set.
  7. Let the cheesecake cool completely, then chill in the refrigerator for at least 3 hours before cutting into bite-sized squares.
