Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (4 ounce) can sliced mushrooms, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup dry red wine (optional)
  • 1 tablespoon olive oil


Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Brown chicken thighs on both sides.
  2. Transfer browned chicken to your slow cooker.
  3. Add chopped onion, bell peppers, and minced garlic to the skillet. Sauté until softened, about 5 minutes.
  4. Add the sautéed vegetables, crushed tomatoes, drained mushrooms, oregano, basil, salt, pepper, and red wine (if using) to the slow cooker.
  5. Stir to combine.
  6. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until chicken is tender and cooked through.
  7. Shred chicken with two forks before serving, or serve whole.
