Description
A simple and delicious Crockpot Chicken Cacciatore recipe that’s perfect for a weeknight meal.
Ingredients
- 2 lbs boneless, skinless chicken thighs
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1 (4 ounce) can sliced mushrooms, drained
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup dry red wine (optional)
- 1 tablespoon olive oil
Instructions
- In a large skillet, heat olive oil over medium-high heat. Brown chicken thighs on both sides.
- Transfer browned chicken to your slow cooker.
- Add chopped onion, bell peppers, and minced garlic to the skillet. Sauté until softened, about 5 minutes.
- Add the sautéed vegetables, crushed tomatoes, drained mushrooms, oregano, basil, salt, pepper, and red wine (if using) to the slow cooker.
- Stir to combine.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until chicken is tender and cooked through.
- Shred chicken with two forks before serving, or serve whole.
Notes
- Serve over pasta, rice, or with crusty bread.
- Garnish with fresh parsley or grated Parmesan cheese.
- For a spicier version, add a pinch of red pepper flakes.
