Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian seasoned breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Flatten chicken breasts to about 1/2 inch thickness.
  3. Season chicken with salt and pepper.
  4. Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese.
  5. Dredge each chicken breast in flour, then egg, and finally coat with breadcrumb mixture.
  6. Heat olive oil in an oven-safe skillet over medium-high heat.
  7. Sear chicken for 2-3 minutes per side until golden brown.
