Description
A hearty and flavorful beef stew made easily in a slow cooker, perfect for a comforting meal.
Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- 1 pound potatoes, peeled and cubed
- 3 large carrots, peeled and sliced
- 1 cup frozen peas
Instructions
- In a bowl, toss beef cubes with flour, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat. Brown beef on all sides in batches. Transfer browned beef to the slow cooker.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Pour in beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the skillet.
- Pour the broth mixture over the beef in the slow cooker. Add thyme, rosemary, and bay leaves.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until beef is tender.
- Add cubed potatoes and sliced carrots to the slow cooker. Continue cooking on low for another 2-3 hours, or on high for 1-1.5 hours, until vegetables are tender.
- Stir in frozen peas during the last 15 minutes of cooking.
- Remove bay leaves before serving.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the stew during the last 30 minutes of cooking.
- Feel free to add other vegetables like celery or mushrooms.
