A refreshing and flavorful strawberry soda with a delightful twist.


Ingredients

  • 1 cup fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar
  • 1 cup water
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup club soda, chilled
  • Ice cubes
  • Optional: Fresh mint sprigs for garnish


Instructions

  1. In a saucepan, combine sliced strawberries, sugar, and water.
  2. Bring to a boil, then reduce heat and simmer for 10-15 minutes, or until strawberries are soft and the syrup has thickened slightly.
  3. Remove from heat and let cool. Strain the strawberry syrup through a fine-mesh sieve, pressing gently on the solids to extract as much liquid as possible. Discard the solids.
  4. In a separate bowl, whisk together heavy cream, milk, vanilla extract, almond extract, and salt until well combined.
  5. Fill glasses with ice cubes.
  6. Pour about 2-3 tablespoons of the strawberry syrup into each glass.
  7. Add about 1/4 cup of the cream mixture to each glass.
  8. Top with chilled club soda.
  9. Stir gently to combine.
  10. Garnish with fresh mint sprigs, if desired.

Notes

  • For a sweeter soda, add more sugar to the strawberry syrup.
  • For a less sweet soda, reduce the amount of sugar.
  • You can adjust the amount of strawberry syrup and cream mixture to your preference.
  • If you don’t have almond extract, you can omit it or use an extra 1/4 teaspoon of vanilla extract.
  • Ensure the club soda is well chilled for the best fizz.
