Ingredients

  • 2 large cucumbers, thinly sliced
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Sriracha or other hot sauce (adjust to taste)
  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 2 tablespoons chopped peanuts, for garnish
  • 1 tablespoon chopped fresh cilantro, for garnish


Instructions

  1. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, Sriracha, minced garlic, and grated ginger until smooth. If the sauce is too thick, add a teaspoon of water at a time until it reaches your desired consistency.
  2. Place the thinly sliced cucumbers in a medium serving bowl.
  3. Pour the spicy peanut sauce over the cucumbers.
  4. Gently toss to coat the cucumbers evenly with the sauce.
  5. Garnish with chopped peanuts and fresh cilantro before serving.

Notes

  • For a spicier sauce, add more Sriracha or a pinch of red pepper flakes.
  • If you don’t have fresh ginger, you can use 1/4 teaspoon of ground ginger.
  • This dish is best served chilled.
