A refreshing and flavorful cucumber salad coated in a spicy peanut sauce, perfect as a side dish or a light meal.
Ingredients
- 2 large cucumbers, thinly sliced
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon Sriracha or other hot sauce (adjust to taste)
- 1 clove garlic, minced
- 1/2 teaspoon grated fresh ginger
- 2 tablespoons chopped peanuts, for garnish
- 1 tablespoon chopped fresh cilantro, for garnish
Instructions
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, honey or maple syrup, Sriracha, minced garlic, and grated ginger until smooth. If the sauce is too thick, add a teaspoon of water at a time until it reaches your desired consistency.
- Place the thinly sliced cucumbers in a medium serving bowl.
- Pour the spicy peanut sauce over the cucumbers.
- Gently toss to coat the cucumbers evenly with the sauce.
- Garnish with chopped peanuts and fresh cilantro before serving.
Notes
- For a spicier sauce, add more Sriracha or a pinch of red pepper flakes.
- If you don’t have fresh ginger, you can use 1/4 teaspoon of ground ginger.
- This dish is best served chilled.
- You can add other vegetables like thinly sliced bell peppers or red onions for added color and crunch.
