Description

A simple and delicious recipe for Crock Pot Carne Guisada, a flavorful beef stew perfect for a comforting meal.


Ingredients

  • 2 pounds beef chuck roast, trimmed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (4 ounce) can diced green chilies, undrained
  • 1 cup beef broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh cilantro, for garnish


Instructions

  1. Season beef cubes with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Brown beef on all sides. Transfer beef to a slow cooker.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
  4. Add the browned beef, diced tomatoes, diced green chilies, beef broth, chili powder, and cumin to the slow cooker. Stir to combine.
  5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
  6. Shred the beef with two forks.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the crock pot during the last 30 minutes of cooking.
  • Adjust chili powder and cumin to your spice preference.
