A simple and delicious recipe for Crock Pot Carne Guisada, a flavorful beef stew perfect for a comforting meal.
Ingredients
- 2 pounds beef chuck roast, trimmed and cut into 1-inch cubes
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (4 ounce) can diced green chilies, undrained
- 1 cup beef broth
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh cilantro, for garnish
Instructions
- Season beef cubes with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Brown beef on all sides. Transfer beef to a slow cooker.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more.
- Add the browned beef, diced tomatoes, diced green chilies, beef broth, chili powder, and cumin to the slow cooker. Stir to combine.
- Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is tender.
- Shred the beef with two forks.
- Serve hot, garnished with fresh cilantro.
Notes
- For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the crock pot during the last 30 minutes of cooking.
- Adjust chili powder and cumin to your spice preference.
- Serve with rice, tortillas, or your favorite side dishes.
