Description
A rich and creamy chicken dish inspired by Tuscan flavors, featuring sun-dried tomatoes, spinach, and garlic in a decadent sauce.
Ingredients
- 1.5 lbs boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 tablespoon butter
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and pepper to taste
Instructions
- Season chicken breasts with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
- Add minced garlic to the skillet and cook for about 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
- Stir in heavy cream and sun-dried tomatoes. Bring to a simmer.
- Return chicken to the skillet, reduce heat to low, and cover. Simmer for 10-15 minutes, or until chicken is cooked through.
- Stir in Parmesan cheese and spinach, and cook until spinach is wilted.
- Season with additional salt and pepper if needed.
- Serve hot.
Notes
- For a thicker sauce, simmer uncovered for a few extra minutes.
- You can add other vegetables like mushrooms or artichoke hearts.
- Serve with pasta, rice, or crusty bread.
