A rich and creamy chicken dish inspired by Tuscan flavors, featuring sun-dried tomatoes, spinach, and garlic in a decadent sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/4 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken breasts for 3-4 minutes per side, until golden brown. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook for about 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the pan.
  6. Stir in heavy cream and sun-dried tomatoes. Bring to a simmer.
  7. Return chicken to the skillet, reduce heat to low, and cover. Simmer for 10-15 minutes, or until chicken is cooked through.
  8. Stir in Parmesan cheese and spinach, and cook until spinach is wilted.
  9. Season with additional salt and pepper if needed.
  10. Serve hot.

  • For a thicker sauce, simmer uncovered for a few extra minutes.
