Description

A quick and easy recipe for creamy sausage pasta, perfect for a weeknight dinner.


Ingredients

  • 1 lb Italian sausage (mild or hot)
  • 1 lb pasta (penne, rigatoni, or your favorite)
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage from skillet and set aside, leaving drippings in the skillet.
  3. Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
  4. Stir in crushed tomatoes and bring to a simmer. Reduce heat and cook for 10 minutes, stirring occasionally.
  5. Stir in heavy cream and Parmesan cheese. Cook until sauce is heated through and slightly thickened.
  6. Return cooked sausage to the skillet. Add cooked pasta and toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
  7. Season with salt and freshly ground black pepper to taste.
  8. Garnish with fresh parsley before serving.

  • For a spicier dish, use hot Italian sausage or add a pinch of red pepper flakes with the garlic.
  • You can substitute spinach or other vegetables for a more nutritious meal.
