Description
A quick and easy recipe for creamy sausage pasta, perfect for a weeknight dinner.
Ingredients
- 1 lb Italian sausage (mild or hot)
- 1 lb pasta (penne, rigatoni, or your favorite)
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper to taste
Instructions
- Cook pasta according to package directions. Drain, reserving about 1 cup of pasta water.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Remove sausage from skillet and set aside, leaving drippings in the skillet.
- Add chopped onion to the skillet and cook until softened, about 5 minutes. Add minced garlic and cook for 1 minute more until fragrant.
- Stir in crushed tomatoes and bring to a simmer. Reduce heat and cook for 10 minutes, stirring occasionally.
- Stir in heavy cream and Parmesan cheese. Cook until sauce is heated through and slightly thickened.
- Return cooked sausage to the skillet. Add cooked pasta and toss to combine. If the sauce is too thick, add a little reserved pasta water until desired consistency is reached.
- Season with salt and freshly ground black pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, use hot Italian sausage or add a pinch of red pepper flakes with the garlic.
- You can substitute spinach or other vegetables for a more nutritious meal.
