Instructions
- In a food processor, combine the crumbled feta cheese, softened cream cheese, pumpkin puree, 1 tablespoon of olive oil, minced garlic, pumpkin pie spice, salt, and pepper.
- Process until the mixture is smooth and creamy, scraping down the sides of the bowl as needed. This may take 2-3 minutes.
- Taste and adjust seasoning if necessary.
- Transfer the whipped feta dip to a serving bowl.
- Drizzle with a little extra olive oil and garnish with toasted pumpkin seeds and fresh herbs, if desired.
