A rich and flavorful chicken dish featuring tender chicken breast in a creamy mushroom sauce.
Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 pound mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute more until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
- Stir in Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
- Return the cooked chicken to the skillet and stir to coat with the sauce. Heat through for 1-2 minutes.
- Serve hot.
Notes
- For a richer sauce, you can use a combination of heavy cream and half-and-half.
- Add a splash of white wine to the skillet before adding the cream for an extra layer of flavor.
- Serve over pasta, rice, or with mashed potatoes.
