Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 pound mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add mushrooms to the same skillet and cook until softened and browned, about 5-7 minutes.
  4. Add minced garlic and cook for 1 minute more until fragrant.
  5. Pour in heavy cream and chicken broth. Bring to a simmer and cook for 5 minutes, stirring occasionally, until the sauce has thickened.
  6. Stir in Parmesan cheese and chopped parsley. Season with salt and pepper to taste.
  7. Return the cooked chicken to the skillet and stir to coat with the sauce. Heat through for 1-2 minutes.
  8. Serve hot.

  • For a richer sauce, you can use a combination of heavy cream and half-and-half.
