Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz fettuccine or your favorite pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • ¼ cup chicken broth
  • 2 tbsp butter
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish (optional)


Instructions

  1. Cook pasta according to package directions. Drain, reserving about ½ cup of pasta water, and set aside.
  2. While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
  4. Pour in the heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
  5. Reduce heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened.
  6. Return the cooked chicken to the skillet. Add the drained pasta and toss to coat everything in the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
  7. Season with additional salt and pepper to taste.
  8. Serve immediately, garnished with fresh parsley if desired.
