Description
A decadent and easy-to-make pasta dish featuring tender chicken and a rich, creamy garlic parmesan sauce. Perfect for a weeknight dinner or a special occasion.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 oz fettuccine or your favorite pasta
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 ½ cups heavy cream
- ½ cup grated Parmesan cheese
- ¼ cup chicken broth
- 2 tbsp butter
- Salt and freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Cook pasta according to package directions. Drain, reserving about ½ cup of pasta water, and set aside.
- While pasta is cooking, heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute, being careful not to burn it.
- Pour in the heavy cream and chicken broth. Bring to a simmer, stirring occasionally.
- Reduce heat to low and stir in the grated Parmesan cheese until the sauce is smooth and thickened.
- Return the cooked chicken to the skillet. Add the drained pasta and toss to coat everything in the creamy sauce. If the sauce is too thick, add a little of the reserved pasta water until it reaches your desired consistency.
- Season with additional salt and pepper to taste.
- Serve immediately, garnished with fresh parsley if desired.
Notes
- For a richer sauce, you can add a splash of white wine when sautéing the garlic.
- Feel free to add your favorite vegetables like broccoli florets or spinach to this dish.
- Ensure the chicken is cooked through before adding it back to the sauce.
