  • 1 1/2 pounds cooked chicken (diced)
  • 1/2 cup butter
  • 1/2 cup flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup sliced mushrooms (optional)
  • 1/2 cup frozen peas and carrots (optional)
  • 1/4 cup pimentos (diced, optional)
  • 2 tablespoons dry sherry (optional)
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Melt the butter in a large saucepan or pot over medium heat.
  2. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
  3. Slowly whisk in the chicken broth until the mixture is smooth and thickened.
  4. Stir in the heavy cream, salt, and pepper. Bring the mixture to a gentle simmer, stirring occasionally.
  5. Reduce the heat to low and add the diced cooked chicken, sliced mushrooms (if using), frozen peas and carrots (if using), and diced pimentos (if using).
  6. Simmer for 5-7 minutes, or until the vegetables are tender and the chicken is heated through.
  7. Stir in the dry sherry (if using) and Parmesan cheese (if using).
  8. Serve hot over toast points, puff pastry shells, rice, or pasta.

  • Pre-cooked rotisserie chicken works great for this recipe.
