A classic and simple recipe for Creamy Chicken a la King, perfect for a comforting meal.
Ingredients
- 1 1/2 pounds cooked chicken (diced)
- 1/2 cup butter
- 1/2 cup flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup sliced mushrooms (optional)
- 1/2 cup frozen peas and carrots (optional)
- 1/4 cup pimentos (diced, optional)
- 2 tablespoons dry sherry (optional)
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Melt the butter in a large saucepan or pot over medium heat.
- Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.
- Slowly whisk in the chicken broth until the mixture is smooth and thickened.
- Stir in the heavy cream, salt, and pepper. Bring the mixture to a gentle simmer, stirring occasionally.
- Reduce the heat to low and add the diced cooked chicken, sliced mushrooms (if using), frozen peas and carrots (if using), and diced pimentos (if using).
- Simmer for 5-7 minutes, or until the vegetables are tender and the chicken is heated through.
- Stir in the dry sherry (if using) and Parmesan cheese (if using).
- Serve hot over toast points, puff pastry shells, rice, or pasta.
Notes
- Pre-cooked rotisserie chicken works great for this recipe.
- Adjust the consistency by adding more broth or cream if it’s too thick.
- For a richer flavor, use whole milk instead of heavy cream, but note it may not be as thick.
- This dish can be easily doubled for a larger crowd.
