Ingredients

  • 1 large head of cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • Pinch of nutmeg (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Blanch cauliflower florets in boiling salted water for 3-4 minutes. Drain and set aside.
  3. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  4. Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until thickened.
  5. Remove from heat. Stir in Gruyere cheese and Parmesan cheese until melted. Season with salt, pepper, and nutmeg if using.
  6. Arrange cauliflower in the prepared baking dish. Pour cheese sauce over the cauliflower, ensuring it’s well coated.
  7. Bake for 25-30 minutes, or until the gratin is bubbly and golden brown on top.
  8. Let stand for 5 minutes before serving.

Notes

  • For a crispier topping, you can add a sprinkle of breadcrumbs mixed with melted butter before baking.
