A rich and creamy cauliflower gratin, baked to golden perfection. This easy recipe is a comforting side dish or a light main course.
Ingredients
- 1 large head of cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk
- 1/2 cup heavy cream
- 1 cup shredded Gruyere cheese
- 1/2 cup shredded Parmesan cheese
- Salt and freshly ground black pepper to taste
- Pinch of nutmeg (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Blanch cauliflower florets in boiling salted water for 3-4 minutes. Drain and set aside.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring constantly, until thickened.
- Remove from heat. Stir in Gruyere cheese and Parmesan cheese until melted. Season with salt, pepper, and nutmeg if using.
- Arrange cauliflower in the prepared baking dish. Pour cheese sauce over the cauliflower, ensuring it’s well coated.
- Bake for 25-30 minutes, or until the gratin is bubbly and golden brown on top.
- Let stand for 5 minutes before serving.
Notes
- For a crispier topping, you can add a sprinkle of breadcrumbs mixed with melted butter before baking.
- Feel free to substitute Gruyere with cheddar or a blend of your favorite cheeses.
